Add a dash of Christmas joy to your kitchen with this recipe by Aunty D!
Ingredients:
Grated Coconut 400 g
Coconut Treacle 1 1/2 cups
Brown Sugar 1 cup
Fennel Seeds 1/4 tsp
Cardamom 3 nos
Flour 3/5 cup
Baking Powder 2 tsp
Baking Soda 1/2 tsp
Roasted Semolina 1/2 cup
Grated Lime Peel 1 nos
Salt 1/4 tsp
Dried Plums 1/2 cup
Dates 1 cup
Vanilla 1 tsp
Chopped Cashew 1/4 cup
Cashew 10 nos (optional)
Method:
Start by mixing the grated coconut in a deep saucepan with honey and brown sugar.
Add fennel seeds and crushed cardamom into the pani pol (sweet coconut) mixture, and take the saucepan off the heat to cool.
Meanwhile, in a bowl, mix flour, baking powder and baking soda and keep aside for later.
To the cooled pani pol mixture, add roasted semolina, grated lime peel, salt, dried plums, dates and vanilla, and combine well.
Next, gradually fold the flour mixture into the pani pol mixture along with chopped cashews.
Add the batter to a baking tray lined with parchment paper and evenly spread the batter.
Add more cashews or toppings of your choice and bake for 35 to 40 minutes at 150°C.
Carefully take it out of the oven and serve it with a side of ice cream or on its own. Enjoy!
