Tangy, sweet, and oh-so-delicious – this Brinjal Moju recipe from Aunty D will surely leave you wanting mo-ju!
Here’s how you make it!
Ingredients:
Brinjal 250 g
Green Chilli 6 nos
Water 2 tbsp
Salt ½ tsp
Vinegar ½ tsp
Chilli Flakes 1 tbsp
Ginger + Garlic 1 tsp
Mango Chutney 1 tbsp
Sugar ½ tsp
Red Onion 10 nos
Fried Sprats (optional)
Method:
Fry the brinjal in hot oil until golden brown.
In the same pan, turn off the heat and lightly fry the green chillis.
Heat up a separate pot and add water, salt, vinegar, chilli flakes, ginger and garlic, and combine.
Next, mix in mango chutney, sugar, fried brinjal, fried green chilli and red onions to the same pot.
Optionally, add in fried sprats to enhance the flavour of the dish.
Stir until well combined and take the pot off the heat.
Pair this brinjal moju with rice and your favourite curries, and enjoy!
