Anyone up for a snack!?
Get ready for a roll with our spud-tacular recipe that’s bound to make your taste buds do the happy dance with potato bonda!
Follow along with Aunty D on how to make Potato Bonda!
Ingredients:
Oil 1 tbsp
Mustard seeds 1 tsp
Cumin 1 tsp
Chopped ginger 1 tsp
Chopped curry leaves 1 tbsp
Chopped green chilli 2 nos
Chopped cashew 2 tbsp
Salt 1 tsp
Turmeric powder 1/2 tbsp
Asafoetida 2 tsp
Mashed potato 500 g
Chopped coriander leaves 2 tbsp
Lemon juice 1 tbsp
Gram flour 1 cup
Rice flour 1/4 cup
Chilli powder 1 tsp
Water 1/2 cup + more if required
Baking soda 1/2 tsp
Method:
To a heated pan, add oil, mustard seeds, cumin, ginger, curry leaves, green chilli, and cashew nuts.
Once the mixture is lightly fried, mix in salt, turmeric powder, and asafoetida and give it a good mix.
Now add your mashed potatoes to the pan, along with the coriander leaves. Mix and fold in the potatoes until fully incorporated with the seasoning.
Follow up with adding in the lemon juice and giving it a quick final mix until well combined. Take it off the heat to cool.
Now to make the batter, add gram flour, rice flour, salt, turmeric powder, asafoetida, and chilli powder to a bowl and stir well.
Add in water, along with baking soda and mix until the ingredients are well combined and have the consistency as seen in the video.
Now we can get to frying. Make a bite-sized ball with the potato mixture.
Dip it in the batter, making sure it is well coated.
In a deep pot filled with heated oil, safely add your potato bonda and carefully turn it around so all sides fry evenly.
Once golden brown, remove the fried potato bonda from the oil.
Serve with a side of your favourite dip and enjoy!
